Either a movie or TV Show about the decades of Lukes Jedi Order, with Ben Solo, Tai the other Students etc. Show us the adventures that already happened in Legends, which are slowly getting adapted to canon anyway, show us the Yoozahn Vong war and the Abeloth fight.
