This is basically how I would have written star wars, I would have made them as books beforehand. It would a little different since these movies would be released in timeline order and I would sort of rewrite a chunk of it. For instance I would have anakin be 16 in the first movie not 10 and Qui gon would not exist at all instead focusing more Obi Wan Kenobi and his jedi friend Mace Windu and Obi would be a little bit older, and mace would die at the end of the first movie, killed by Count Dooku not Darth maul, have Dooku be a recurring villain for Obi Wan to have a score to settle with in ep 2 when they meet years later. the third movie is not about anakin's turn, 2 is about the start of the clone wars and 3 Is during the clone wars and then 4 jumps 20 years so you're still be surprised when the truth is revealed. And movies 4 and 5 would be mostly similar to og movies plot wise except for a few changes here and there, for 6 I would actually make it 2 movies cause I feel there is to much to cram into one movie so 2 it is, 6 would be about luke learning about Obi and Vader's past with the B plot of the gang, minus luke trying get intell about the second death star and ending with a big action scene at Jaba's palace, would end with Yoda's death and, through force flashbacks, luke learns leia is his sister. 7 would start right after 6 and would be similar to return of the jedi exept they would be wookies instead of ewokes, and it ends the same with luke turning Vader back to the light, killing the emperor and restoring peace and freedom to the galaxy.
